Cheesy Potato Breakfast Casserole

A delicious and hearty breakfast casserole made with cheesy potatoes, turkey bacon, and chicken ham.

Ingredients

  • 2 cups shredded potatoes
  • 1 cup turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 2 cups shredded cheese
  • 4 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix shredded potatoes, turkey bacon, chicken ham, and half of the cheese.
  3. In another bowl, whisk together eggs, milk, garlic powder, onion powder, salt, and pepper.
  4. Combine the wet and dry ingredients, then transfer to a greased baking pan.
  5. Top with remaining cheese.
  6. Bake for 45-50 minutes, or until the casserole is set and cheese is bubbly.

Notes

  • For a spicier option, add diced jalapeños.
  • This casserole can be prepared in advance and stored in the refrigerator overnight before baking.
