Cheddar Bay Biscuit Seafood Pot Pie

A delicious and comforting seafood pot pie topped with cheddar bay biscuits.

  • 1 pound shrimp, peeled and deveined
  • 1 pound scallops
  • 1 cup frozen peas
  • 1 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/4 cup onions, chopped
  • 4 cups seafood broth
  • 1/4 cup flour
  • 1/4 cup butter
  • 1 teaspoon garlic powder
  • 1 teaspoon Old Bay seasoning
  • 1 package cheddar bay biscuit mix

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large pot, melt the butter over medium heat. Add onions, celery, and carrots and sauté until soft.
  3. Sprinkle the flour over the vegetables and stir to combine.
  4. Slowly add the seafood broth while stirring to avoid lumps.
  5. Add the shrimp, scallops, peas, garlic powder, and Old Bay seasoning, and simmer until seafood is cooked through.
  6. Pour the seafood mixture into a baking dish.
  7. Prepare the cheddar bay biscuit mix according to package directions.
  8. Dollop the biscuit mixture on top of the seafood filling.
  9. Bake for 20-25 minutes, or until biscuits are golden brown.
