Carrot Potato Soup

A warm and comforting carrot potato soup recipe that is perfect for cozy nights.

Ingredients

  • 4 large carrots
  • 2 large potatoes
  • 1 onion
  • 3 cups vegetable broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

  1. Peel and chop the carrots and potatoes.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onions and sauté until translucent.
  4. Add carrots and potatoes, sauté for a few more minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and simmer until vegetables are tender.
  7. Blend the soup until smooth, return to pot.
  8. Stir in milk, salt, pepper, and paprika.
  9. Heat through and serve warm.
