Carrot Cake Bars

  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking powder

  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, whisk together the granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the grated carrots and vanilla extract.
  5. In another bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  6. Gradually mix the dry ingredients into the wet ingredients until just combined.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow to cool before cutting into bars.
