Cajun White Chicken Chili

  • 1 pound boneless, skinless chicken breasts
  • 6 slices turkey bacon
  • 1 can white beans
  • 1 can corn
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onions and garlic, sautéing until translucent.
  2. Add turkey bacon and cook until crispy. Remove and chop into bite-sized pieces.
  3. Add the chicken breasts to the pot, cooking until browned on all sides.
  4. Pour in chicken broth, add white beans, corn, and Cajun seasoning. Bring to a simmer.
  5. Reduce heat and stir in heavy cream, letting it simmer for additional 10 minutes.
  6. Serve hot, garnished with turkey bacon bits.

Notes

  • This chili can be adjusted for spice by adding more Cajun seasoning.
  • For a vegetarian version, omit the turkey bacon and use vegetable broth.
