Berry Chantilly Cake

A delightful and indulgent dessert that combines the freshness of berries with the richness of Chantilly cream.

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with milk, and mix until just combined.
  7. Divide the batter between the prepared cake pans and smooth the tops.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. In a bowl, whip the heavy cream with the powdered sugar until stiff peaks form.
  11. Once the cakes are cooled, spread a layer of whipped cream on top of one cake layer and add a layer of mixed berries.
  12. Place the second cake layer on top and frost the entire cake with the remaining whipped cream.
  13. Decorate the top with additional berries.
  14. Chill the cake for at least one hour before serving.

Notes

  • For best flavor, use fresh, ripe berries.
  • You can substitute the all-purpose flour for gluten-free flour if needed.
