Banana Oatmeal Bars

Ingredients

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/4 cup peanut butter or almond butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the bananas completely.
  3. Add the rolled oats, honey or maple syrup, peanut butter, vanilla extract, cinnamon, and salt to the mashed bananas. Stir until well combined.
  4. Line an 8-inch square baking dish with parchment paper and pour the mixture into the dish, spreading it evenly.
  5. Bake for 25-30 minutes, or until the edges turn golden brown.
  6. Allow to cool before slicing into bars.

Notes

  • For extra flavor, consider adding nuts or chocolate chips.
  • These bars can be frozen for up to 3 months.
