- 2 slices turkey bacon
- 1 cup shredded cheese (cheddar or your choice)
- 4 large flour tortillas
- 1 tablespoon butter
- Salt to taste
- Black pepper to taste
- In a skillet over medium heat, cook the turkey bacon until crispy. Remove and chop.
- In the same skillet, whisk eggs and season with salt and black pepper. Scramble the eggs until fully cooked.
- Lay one tortilla in the skillet, sprinkle half of the cheese, add half the scrambled eggs and chopped bacon, then top with more cheese and another tortilla.
- Cook until the bottom tortilla is golden brown, about 3-4 minutes. Flip carefully and cook the other side until golden and cheese melts.
- Repeat with remaining ingredients. Cut into wedges and serve hot.
