Bacon and Egg Salad

A delicious and nutritious salad featuring turkey bacon and chicken ham for a healthy twist.

Ingredients

  • 4 slices turkey bacon
  • 2 large eggs
  • 1 cup mixed greens
  • 1/2 cup cherry tomatoes
  • 1/4 cup red onion
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cook the turkey bacon in a skillet over medium heat until crispy. Remove and chop.
  2. Boil the eggs for 10 minutes, then cool, peel, and chop.
  3. In a large bowl, combine mixed greens, cherry tomatoes, red onion, and chopped turkey bacon and eggs.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Drizzle the dressing over the salad and toss to coat.

Notes

  • For added flavor, you can sprinkle some feta cheese on top.
  • This salad can be served warm or cold.
