Anti-Inflammatory Turmeric Chicken Soup

  • 1 pound boneless chicken breasts, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, grated
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground cumin
  • 4 cups chicken broth
  • 2 cups kale, chopped
  • 1 carrot, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced chicken and cook until browned.
  3. Stir in the onions, garlic, and ginger; sauté for 3 minutes.
  4. Add the turmeric and cumin, stirring to coat the chicken.
  5. Pour in the chicken broth, followed by the kale and carrots.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Season with salt and pepper before serving.
