  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon black pepper
  • 1 pound chicken breast, cubed
  • 6 cups chicken broth
  • 1 cup baby spinach
  • 1 lemon, juiced
  • Salt to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add onions, carrots, and celery. Sauté for about 5 minutes.
  2. Add garlic, ginger, turmeric, and black pepper. Cook for another minute.
  3. Add chicken and cook until lightly browned.
  4. Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 20 minutes.
  5. Add baby spinach and lemon juice. Stir well and season with salt.
