- 4 whole wheat tortillas
- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 1 large egg
- 2 tablespoons olive oil
- 1/4 teaspoon black pepper
- Heat 1 tablespoon of olive oil in a skillet over medium heat.
- In a bowl, whisk the egg with salt and black pepper. Add the spinach and mix well.
- Pour the mixture into the skillet and scramble until the spinach wilts and the egg is cooked.
- Remove the egg mixture from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil. Place a tortilla in the skillet.
- Spread half of the egg mixture on one half of the tortilla and sprinkle with feta cheese.
- Fold the tortilla over and cook until golden brown on both sides. Repeat with the second tortilla.
- Cut the quesadillas into wedges and serve warm.
Notes
- For added flavor, consider adding herbs like oregano or a sprinkle of chili flakes.
- You can also use other types of cheese, such as mozzarella or cheddar.
