10 Minute Spinach and Feta Breakfast Quesadilla

A deliciously quick breakfast option featuring spinach and feta in a quesadilla.

Ingredients

  • 4 whole wheat tortillas
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 large egg
  • 2 tablespoons olive oil
  • 1/4 teaspoon black pepper

Instructions

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. In a bowl, whisk the egg with salt and black pepper. Add the spinach and mix well.
  3. Pour the mixture into the skillet and scramble until the spinach wilts and the egg is cooked.
  4. Remove the egg mixture from the skillet and set aside.
  5. In the same skillet, add another tablespoon of olive oil. Place a tortilla in the skillet.
  6. Spread half of the egg mixture on one half of the tortilla and sprinkle with feta cheese.
  7. Fold the tortilla over and cook until golden brown on both sides. Repeat with the second tortilla.
  8. Cut the quesadillas into wedges and serve warm.

Notes

  • For added flavor, consider adding herbs like oregano or a sprinkle of chili flakes.
  • You can also use other types of cheese, such as mozzarella or cheddar.
